Made from Scratch - Apple Pie

My first question was: Can I make apple pie in a quiche dish? Because that's all I have. 😂



First of all (and most importantly) The Recipe:


Pastry Crust: (for two bottom crusts - double if you want top lattice crusts, not crumble tops)

2 1/2 cups flour (extra for rolling)

1 cup (2 sticks) COLD unsalted butter, cut into cubes

1 teaspoon salt

1 teaspoon sugar

6-10 tblspns ice water

Food processor (I used our Ninja Blender and it worked great)


Crumble Topping:

1 cup brown sugar

1 cup flour

1/4 cup butter, diced


Filling:

1/2 cup unsalted butter

3 tblspn flour

1/4 cup water

1/2 cup brown sugar

6 large granny smith apples


Directions

Pastry Crust: (for two bottom crusts - double if you want top lattice crusts, not crumble tops)

In a food processor (or really awesome blender):

  1. Mix together flour, sugar, and salt

  2. Add butter, a few cubes at a time, pulsing as you go

  3. When all butter has been pulsed in, pulse another dozen or so times

  4. Slowly add 4 tablespoons of ICE cold water (without ice cubes), while pulsing

  5. Add remaining tablespoons, one at a time, while pulsing

  6. When finished, put mixture onto a clean, dry surface. It will appear broken up, but will squish together nicely when pinched. This is how you know it is ready.

  7. Divide mixture into two discs and then form into balls, kneading a couple times

  8. Do not over-knead, or dough will harden and will not roll out easily!

  9. Wrap separate, smooth balls in saran wrap and place in fridge (for anywhere between 1-24 hours)


Crumble Topping:

In a mixing bowl:

  1. Sift together sugar and flour

  2. Mix in butter with stand mixer

  3. You will be left with a kind of chunky, very flour-forward sugar mixture! Perfection.


Filling:

Preheat oven to 425 degrees F.

Peel apples. If you can, core your apples. If you can't, cut into quarters, around core. Then, cut your apples into thin slices.

Roll out crust and place in the bottom of pie (quiche 😂) dish. Crimp the edges.

Delicately lay your apples in a circular formation, building up toward the middle of the dish.

On medium heat, melt butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, increase temperature, and bring to a boil. Reduce temperature and let simmer.

Gently pour the yummy sugar liquid over your apples, careful not to overfill and spill.

Generously cover the yummy drizzled apples with your crumble topping.


Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F. Continue baking for 35 to 45 minutes, until apples are soft.
