
Recipe:
1 lb cauliflower
1 cup small yellow onion, diced
1 cup of diced carrots
3/4 cup diced celery
3 Tbsp butter, divided
2 cups low-sodium chicken broth
Salt and freshly ground pepper
3 Tbsp flour
1.5 cups whole milk
1 cup shredded sharp cheddar
4 - 6 slices bacon, cooked and chopped to bits
1 green onions, chopped
Directions:
Vegetables Mixture

Melt 1 tablespoon of butter in a large pot over medium heat.
Add onion, carrots, and celery. Sauté 5 minutes.
Add chicken broth and cauliflower. Season with salt and pepper. Bring to boil.

Cream Mixture
Melt 2 tablespoons of butter in a sauce pan over medium heat.
Add flour - form paste.
Slowly add milk and bring to a low boil. Stir constantly.
Combine vegetable and cream mixture.
Top with green onion and bacon bits and grated cheese.
