Creamy Cauliflower Soup

Recipe:

  • 1 lb cauliflower

  • 1 cup small yellow onion, diced

  • 1 cup of diced carrots

  • 3/4 cup diced celery

  • 3 Tbsp butter, divided

  • 2 cups low-sodium chicken broth

  • Salt and freshly ground pepper

  • 3 Tbsp flour

  • 1.5 cups whole milk

  • 1 cup shredded sharp cheddar

  • 4 - 6 slices bacon, cooked and chopped to bits

  • 1 green onions, chopped


Directions:


Vegetables Mixture



  1. Melt 1 tablespoon of butter in a large pot over medium heat.

  2. Add onion, carrots, and celery. Sauté 5 minutes.

  3. Add chicken broth and cauliflower. Season with salt and pepper. Bring to boil.










Cream Mixture

  1. Melt 2 tablespoons of butter in a sauce pan over medium heat.

  2. Add flour - form paste.

  3. Slowly add milk and bring to a low boil. Stir constantly.


Combine vegetable and cream mixture.

Top with green onion and bacon bits and grated cheese.
